Chicken Chipotle Chili
- 3 Bacon Slices, Chopped
- 1 lb Chicken Breast Cut into 1 inch pieces
- 1 small Onion, Chopped
- 1 can (14 -oz) Can Chicken Broth
- 2 can (14.5oz) diced tomatos with green chiles undrained
- 1 can (15-oz) Black Beans, rinsed and drained
- 1 tsp Chipotle Seasoning
- 1 cup Shredded Sharp Cheddar
- 1 Salt & Pepper
- 1 Sour Cream, Sliced Fresh Jalapenos (optional)
- In a large, heavy pot cook bacon over medium heat until crisp.
- Transfer bacon to a plate lined with paper towels to drain.
- Add chicken to pot; saute 4 minutes.
- Remove chicken and keep warm.
- Add onion to pot; saute 2 minutes.
- Add broth, tomatoes, beans, chipotle seasoning and salt and pepper; bring to a boil.
- Reduce heat to medium-low.
- Return chicken and bacon to pot; simmer, uncovered, 20 minutes, stirring occasionally.
- ladle chili into bowl.
- Top with cheese and serve with sour cream (if desired) and jalapenos
