Kailua Kona Mushrooms - Stuffed Mushrooms Hawaiian Style

  1. Preheat oven to 400 degrees (200 C.).
  2. Clean mushrooms and remove the stems.
  3. Blanch the spinach, drain it, and chop it coarsely.
  4. Combine the spinach, parmesan cheese, feta cheese, green onion, and parsley and blend well.
  5. Fill the mushroom caps with the spinach cheese mixture.
  6. Bake for 10 minutes at 400 degrees (200 C.).
  7. Serve as you like with cocktails or a luncheon entree.
