Strawberries with Homemade Mascarpone
- 1 qt. strawberries, hulled and washed
- 8 oz. mascarpone
- 2 tbsp. pure vanilla
- 6 tbsp. sugar
- 1/2 cup Half-and-half
- 2 egg yolks
- Divide fruit among 4 large wine glasses.
- Set aside.
- In a blender, combine mascarpone, vanilla, sugar, half-and-half and egg yolks.
- Blend until smooth, about 2 minutes.
- The texture should be like a thick pudding.
- Spoon over the fruit and serve.
