Beef Spicy Stew (Gulai Lemak) Recipe
- 1 lb beef (sirloin/tenderloin preferrable)
- 1/2 x coconut grated
- 5 x glasses water Salt to taste Freshly-grnd white pepper to taste Vegetable oil
- 6 sm shallots
- 3 x garlic cloves
- 6 x candlenuts
- 5 x red bird-eye chilies
- 10 x red chilies
- 1/2 tsp coriander (stir fried without oil)
- 1/2 tsp cumin (stir fried without oil)
- 3/4 x inch turmeric
- 1/2 x coconut grated
- Slice beef into rectangular pcs (about 2 1/2- by 2- by 1/2-inches).
- Pour a glass of water into the grated coconut.
- Squeeze the grated coconut to get the lowfat milk.
- Do this for 4 more times so which you will get 5 glasses of coconut lowfat milk out of it.
- Grind all paste ingredients.
- With medium-high heat, pour 1 Tbsp.
- of vegetable oil into a large pan and stir fry the paste till fragrant and then put in salt and pepper.
- Put the beef in next and stir.
- Last, pour in the coconut lowfat milk and let it cook with medium heat till the beef is tender and the coconut lowfat milk thickened and creates oil.
- Ready to serve.
- This recipe yields 3 to 4 servings.
