Egg Salad & Bologna Rolls Recipe

  1. Make egg salad in medium bowl.
  2. Combine minced Large eggs, green pepper, olives, mayonnaise, mustard and salt; mix well with fork.
  3. Remove bologna rind or possibly casing.
  4. Cut tops off rolls.
  5. Hollow bottoms slightly.
  6. Place a lettuce leaf in each hollow.
  7. Top with bologna slices and about 1/2 c. egg salad.
  8. Butter top and set on salad at an angle.
  9. Garnish each with gherkins.
  10. Chill till needed.
  11. Serves 6.
