Silver Dollar Oat Pancakes (Lower Fat)

  1. In a large bowl, combine the dry ingredients.
  2. In a small bowl, beat the egg, buttermilk, applesauce and butter; stir into dry ingredients just until moistened.
  3. Pour batter by 2 tablespoonfuls onto a hot griddle coated with cooking spray; turn when bubbles form on top.
  4. Cook until second side is golden brown.
  5. Serve with syrup.
  6. TO FREEZE PANCAKES: Allow pancakes to cool.
  7. Arrange in a single layer on baking sheets.
  8. Freeze overnight or until frozen.
  9. Transfer to a resealable plastic freezer bag.
  10. May be frozen for up to 2 months.
  11. TO USE FROZEN PANCAKES: Place on a lightly greased baking sheet.
  12. Bake at 400 degrees F for 4-6 minutes or until heated through.
