Indian inspired coconut rice.
- 1 Basmati rice
- 1 Coconut cream
- 1 salt and pepper
- 1 chopped spring onions
- 1 chopped garlic clove
- 1 frozen peas
- 1 tsp garam masala
- 2 cardomom pods
- 1 fresh thyme
- Wash rice to get rid of starch.
- Place coconut cream in pan with the peas, garlic, cardomom pods, thyme and salt and pepper.
- Coconut cream usually comes out of the carton semi solid, so as it melts in the pan, add equal amounts of water so you end up with half and half.
- Simmer for about 5 minutes.
- Add washed rice and garam masala to the pan and cover with a lid.
- The liquid level should be enough to be absorbed by the rice and cook thouroughly.
- I have left the quantities out of this as it would depend on how much rice you want.
- when the rice is nearly done, add the spring onions and stir.
- When rice is cooked, serve with a garnish, I used almonds and more chopped spring onion but coriander would be nice also.
