Bridget's Holiday Irish Soda Bread Recipe
- 1 c. white raisins
- 3 c. flour
- 1 teaspoon baking soda
- 1 teaspoon baking pwdr
- 1 teaspoon salt
- 1/4 c. sugar
- 2 Large eggs
- 1 1/2 c. buttermilk
- 3 tbsp. melted butter
- Preheat oven to 350 degrees.
- Lightly moisten raisins.
- Sift dry ingredients together in a mixing bowl and add in Large eggs, stirring with a wooden spoon.
- Slowly stir in buttermilk and add in melted butter.
- Stir in raisins.
- Because dough is soft, it bakes in a greased 9"x4"x3" pan.
- Bake for 1 hour or possibly till toothpick inserted in center of loaf comes out clean.
