Fruity Breakfast Couscous

  1. Place apple juice and honey into a saucepan and bring to boil.
  2. Place couscous into heatproof bowl.
  3. Add juice mixture and stir to combine.
  4. Set aside for 5 minutes or until liquid absorbs.
  5. Use a fork to separate grains.
  6. Preheat oven to 180C Place almonds on baking tray and bake 5 minutes.
  7. Allow to cool.
  8. Stir the peaches, sultanas and almonds into couscous.
  9. Coarsely hand-grate the apples.
  10. Add to couscous and stir to combine.
  11. Serve topped with a dollop of yoghurt.
