Crunchy Split Pea Bites

  1. Place split peas in a large bowl; add the water and cover bowl with plastic wrap.
  2. Let soak at room temperature until softened, 4 to 5 hours.
  3. Drain split peas and thoroughly pat dry with paper towels.
  4. Heat a large skillet over medium-high and add 2 teaspoons of each type of oil.
  5. Add half the peas and cook, stirring frequently, until they begin to turn golden brown in spots and become crunchy, 6 to 8 minutes.
  6. Transfer to a paper towellined baking sheet.
  7. Season with 1/4 teaspoon salt (or to taste).
  8. Repeat with the remaining oil and peas.
  9. Let cool before serving.
  10. Peas may be kept for 3 days in an airtight container at room temperature.
