Whipped Maple Sweet Potatoes

  1. Heat oven to 350.
  2. Pierce potatoes with fork.
  3. Place potatoes in square pan, 9x9x2 inches.
  4. Cover and bake about 1 hour 15 minutes or until potatoes can be easily pierced with a knife.
  5. Slip off skins.
  6. Beat potatoes with electric mixer on medium speed until no lumps remain.
  7. Add 2 tablespoons syrup, the butter, salt and nutmeg.
  8. Continue beating until potatoes are light and fluffy.
  9. Drizzle with additional syrup.
