Curried Fruit Compote Recipe
- 1 (1 lb.) can peach halves, liquid removed
- 1 (1 lb.) can pear halves, liquid removed
- 1 (1 lb.) can apricot halves, liquid removed
- 1 (1 lb.) can pineapple chunks, liquid removed
- 1 (1 lb.) can dark sweet cherries, liquid removed (omit if you like)
- 2 tbsp. butter
- 1/4 c. brown sugar
- 1 teaspoon curry pwdr
- Cut peach and pear halves in half.
- Place all fruit except cherries in 2 qt casserole.
- Heat butter, blend in sugar and curry.
- Spoon over fruit.
- Bake at 325 degrees for 15 min.
- Add in cherries and mix.
- Cook 15 more min.
- Serve hot with meat.
