Summertime and the Ginger and Tomato Salad is Easy

  1. In a non-reactive salad bowl, combine the vinegar, ginger, honey* and salt.
  2. Whisk well.
  3. Cut the tomatoes in half and toss with the vinegar/ginger mixture to coat.
  4. Cover and chill until serving time.
  5. Serve on a bed of lettuce if desired.
  6. * you can zap the honey a few seconds in the microwave to soften it so that it whisks well.
