Sweet and Spicy Pizza
- 3/4 cup cumin, toasted
- 3/4 cup fresh cilantro, chopped
- 1-1/2 cups olive oil
- 6 Tbsp. garlic, chopped
- salt
- pepper
- cornmeal
- 12 each Pizza Dough, 16 oz. balls
- 6 cups poblano chile peppers, sliced, seeded and sauteed
- 3 cups Anaheim chile, sliced, seeded and sauteed
- 3/4 cup ancho chile, reconstituted, sliced, seeded and skin removed
- 6 cups pizza sauce
- 42 each , cut in half
- To make the cilantro sauce for the pizza, combine cumin, cilantro, olive oil, garlic, salt and pepper.
- Set aside until needed.
- To assemble each pizza, dust surface with cornmeal and roll 16 oz.
- dough into 12" diameter.
- Combine 2 oz.
- poblano, 1 oz.
- Anaheim, 1/2 oz.
- ancho peppers, 5 oz.
- pizza sauce and spread on dough; add 5-1/4 oz.
- mozzarella and 4-1/2 tablespoons cilantro sauce.
- Bake at 500F for 7-8 minutes until golden brown.
- Cut each pizza into 8 slices.
- Yield: 12 Servings.
