White House Cowboy Cookies
- 3 c. flour
- 1 Tbsp. baking powder
- 1 Tbsp. baking soda
- 1 Tbsp. cinnamon
- 1 tsp. salt
- 3 sticks butter or margarine
- 1 1/2 c. packed light brown sugar
- 1 1/2 c. sugar
- 3 eggs
- 1 Tbsp. vanilla
- 3 c. semi-sweet chocolate chips
- 3 c. rolled oats (quick or old-fashioned)
- 2 c. sweetened flake coconut
- 2 c. finely chopped pecans
- Heat oven to 350u0b0. Mix flour, baking soda, baking powder, cinnamon and salt in a bowl. In another large bowl, beat butter until smooth and creamy. Gradually beat in sugars and combine well. Add eggs, 1 at a time, beating after each. Beat in vanilla. Stir in flour mixture until just combined. Add chocolate chips, oats, coconut and pecans. For each cookie, drop 1/4 cup of dough onto ungreased baking sheets, spacing 3-inches apart. Bake 15 to 20 minutes, rotating sheet halfway through. Remove cookies to rack to cool.
