Chicken Strata(To Be Done The Day Before Serving.)
- 8 slices bread
- 2 c. diced cooked chicken or turkey
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper (optional)
- 1/2 c. finely chopped celery
- 1/2 c. mayonnaise
- 3/4 tsp. salt
- dash of pepper
- 2 slightly beaten eggs
- 1 1/2 c. milk
- 1 can cream of mushroom soup
- 1/2 c. chopped sharp cheese
- Butter 2 slices of bread.
- Cut into 1/2-inch cubes and set aside.
- Cut remaining bread into 1-inch cubes.
- Place 1/2 of unbuttered cubes in bottom of pan.
- Combine chicken, vegetables, mayonnaise and seasoning.
- Spoon over bread cubes.
- Sprinkle remaining bread cubes over chicken.
- Combine eggs and milk and pour over all.
- Cover and chill overnight.
- Spoon soup over top and sprinkle buttered bread cubes over soup.
- Bake at 325u0b0 for 50 minutes or until set.
- Sprinkle cheese over top the last few minutes of baking.
