Portobello Mushroom Burgers

  1. Heat 1 tablespoon of the olive oil in a large nonstick skillet over medium-high heat.
  2. Add the onion and garlic; cook, stirring constantly, until aromatic and tender, about 2 minutes.
  3. Add the mushrooms and carrot; continue to cook until they are tender, about 4 more minutes.
  4. Layer the bottom half of a bun with lettuce, a burger, and a tomato slice.
  5. Top with the upper half of the bun and serve hot.
  6. Toast bread in oven or on panini grill until lightly browned.
  7. Spread them with your choice of mayonnaise, cheese, or mustard.
