Broiled Tomatoes
- 6 medium red ripe tomatoes
- 24 slivers garlic
- Salt to taste if desired
- Freshly ground pepper to taste
- 3 tablespoons olive oil
- 4 tablespoons grated Parmesan cheese
- 4 tablespoons chopped fresh basil
- Preheat the broiler to high, 500 degrees.
- Cut the tomatoes in half and arrange, cut side up, in a baking dish.
- Insert 2 garlic slivers in each half.
- Sprinkle with salt, pepper and olive oil.
- Sprinkle with the cheese.
- Place under the broiler for about 5 minutes until bubbling and the garlic tips start to brown.
- Remove garlic, sprinkle with basil and serve.
