Healthy Soup

  1. dice, chop veggies.
  2. sautee onions in olive oil until soft.
  3. add carrots, celery, sweet potato, and quinoa sautee for about 3 minutes, add broth and water.
  4. cook for 15 minutes, or until sweet potato is almost fork tender.
  5. Add cooked beef and spinach simmer 5 minutes.
  6. Turn off the burner and let sit for an additional 5 minutes.
  7. and salt and pepper to taste.
