Barley Tea Cookies

  1. Finely chop the barley tea till it's powder-like (It's even easier if you use a coffee grinder).
  2. Next in a bowl in which you've let the butter return to room temperature, mix the sugar in till it has a cream-like consistency.
  3. Now take what you made in Step 2 and mix in the egg and vanilla essence.
  4. Next, sift in the flour and baking powder.
  5. Once it's roughly been mixed together, mix in the barley flour.
  6. Form the dough into round shapes an arrange them on parchment paper (leave plenty of space in between because they will expand).
  7. Bake them in a preheated oven at 180C for 10 minutes.
  8. Once they are golden brown as pictured below, they are done.
