Batter-Fried Candy Bar Bites
- 1 dozen mini candy bars
- 1 1/4 cup flour, more for dredging
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1 cup seltzer
- Vegetable oil, for frying
- Freeze the candy bars for 30 minutes.
- Whisk together flour, baking powder and salt in a large bowl.
- Whisk in seltzer.
- Heat 4 inches of oil to 375 degrees in a deep fryer or saucepan.
- Dredge candy bars in flour, then coat evenly with batter.
- Working in batches, fry until golden and puffed all over, turning if needed, about 2 to 3 minutes.
- Drain on paper towels.
