Rougail de Mangues Vertes
- 3 green mangoes
- 4 scallions, chopped
- 1 sm. yellow onion, sliced
- 1/8 cup Spanish thyme leaves
- 1 tbsp. vegetable oil
- Salt and pepper
- Chili pepper, to taste
- Peel the mangoes and cut the flesh into chunks.
- Discard the seeds.
- In a sauce pot simmer the mangoes with enough water to cover for 15 minutes.
- Combine the mangoes with the scallions, onion, thyme and oil.
- Reduce to a paste in the blender or processor.
- Store in the refrigerator in a covered bowl.
- Add the salt, pepper and chili pepper before serving as a dip or spread on canapes, crackers, toast or casava leaves.
