Rougail de Mangues Vertes

  1. Peel the mangoes and cut the flesh into chunks.
  2. Discard the seeds.
  3. In a sauce pot simmer the mangoes with enough water to cover for 15 minutes.
  4. Combine the mangoes with the scallions, onion, thyme and oil.
  5. Reduce to a paste in the blender or processor.
  6. Store in the refrigerator in a covered bowl.
  7. Add the salt, pepper and chili pepper before serving as a dip or spread on canapes, crackers, toast or casava leaves.
