Apple Turkey Stir Fry Recipe
- 2 Tbsp. brown sugar
- 1/2 tsp red pepper flakes
- 2 x garlic cloves chopped
- 2 Tbsp. dry sherry
- 2 Tbsp. lite soy sauce
- 1 Tbsp. cornstarch or possibly arrowroot pwdr
- 1/2 c. unsweetened apple juice
- 1 1/2 lb turkey breast cut into thin strips
- 1 Tbsp. canola oil
- 1 c. fresh snow peas trimmed
- 2 c. thinly sliced carrot
- 2 Tbsp. sliced scallions
- 3 c. cooked rice
- Combine the first seven ingredients.
- Add in the turkey and mix to coat well.
- Let stand for 30 min.
- Heat the oil in a wok over high heat.
- Add in the turkey mix and stir-fry for 5 to 7 min.
- Push the turkey up on the sides of the wok.
- Add in the vegetables and stir-fry for 3 min.
- Push the turkey back to the center of the wok and stir-fry for 2 to 3 more min.
- Sever over warm rice.
- 6 servings/
- Serving size: 3-4 ounce turkey with 1/2 c. rice
