Chicken Puttanesca-Style
- 2 tablespoons olive oil
- 2 12-3 lbs chicken pieces
- 1 medium onion, sliced
- 14 cup balsamic vinegar
- 1 (26 ounce) jar pasta sauce, Ragu Old World Style (1lb. 10oz. jar)
- 1 cup black olives, sliced
- 1 tablespoon capers, drained
- 14 teaspoon red pepper flakes (or a few dashes of Tabasco sauce)
- salt, to taste
- black pepper
- 1 tablespoon fresh parsley, chopped
- in a skillet heat olive oil over med-high heat and brown chicken, remove chicken and set aside.
- in same skillet add onion, vinegar and cook over medium heat, stirring occasionally, for 3 minutes.
- stir in pasta sauce, salt, and pepper return chicken to skillet and simmer covered for 25 minutes or until chicken is thoroughly cooked.
- stir in olives and capers, heat through.
- sprinkle with parsley and serve over hot pasta or rice.
