Creamy Chicken and Rice Pies

  1. Boil rice in a large saucepan to pack instructions.
  2. Drain.
  3. Heat oil in a frying pan over a medium heat.
  4. Add onion and garlic and cook for 3-4 minutes or until softened.
  5. Add curry powder a cook a further minute.
  6. Add capsicum and zucchini and cook 4-5 minutes until just tender.
  7. Combine rice, vegetables, chicken, mayonnaise, milk and parsley in a large bowl.
  8. Spoon into 6 greased ovenproof ramekins.
  9. Sprinkle with cheese and bake at 180C for 15 - 20 minutes or until golden.
