Lemon Fluff

  1. Note: The prep time includes the time required for the jello to chill.
  2. Combine the jello, hot water, lemon juice, and sugar in a mixing bowl and stir until jello is dissolved.
  3. Chill till partially set, about 1 hour.
  4. Just before jello is set, pour the chilled evaporated milk into a large mixing bowl and whip until stiff peaks form.
  5. Fold together with jello mixture.
  6. Pour 2 cups of vanilla wafer crumbs into the bottom of a 13 x 9 inch pan.
  7. Top with jello mixture, then sprinkle with remaining vanilla wafer crumbs.
  8. Chill until set; a minimum of two hours, but best if allowed to chill at least 4 hours.
