Marlin Mayo Cheese and Crumb Fillets

  1. Oil a dish, lay fillets out.
  2. Coat with mayonnaise, you don't want to see the fillets too much, but then again, you don't want to be eating all mayo either!
  3. Season with salt and pepper to taste.
  4. Combine crumbs, parmesan, grated cheese and seasonall in bowl, combine well, pour over fish.
  5. Sprinkle with extra cheese if wanted.
  6. Lightly sprinkle dill tips over mixture.
  7. Cover loosely with foil.
  8. Bake at 180C for 20 minutes Remove foil and continue cooking for 10 mins until golden and crispy.
  9. Serve with crisp salad.
