Zucchini Vegetable Medley
- 6 Tbsp. butter or margarine
- 1 medium green pepper, diced
- 1/4 c. chopped onions (more if desired)
- 3 stalks celery, chopped
- 2 medium zucchini, sliced in chunks
- 1/2 tsp. salt
- 1 tsp. sweet basil (this gives it a special flavor)
- 1 Tbsp. soy or Worcestershire sauce
- 1 c. fresh or canned corn kernels
- 2 medium tomatoes, cut into wedges
- 1 can Mexican or Italian stewed tomatoes
- In very large skillet, melt butter.
- Add green pepper, onions and celery.
- Saute about 3 minutes.
- Stir in zucchini, salt, sweet basil and soy sauce.
- Cover and simmer about 5 minutes.
- Stir in corn and tomatoes and the stewed tomatoes.
- Cover and simmer until vegetables are crisp-tender.
- You may serve this dish as a soup or serve over cooked rice or noodles.
