Zucchini Vegetable Medley

  1. In very large skillet, melt butter.
  2. Add green pepper, onions and celery.
  3. Saute about 3 minutes.
  4. Stir in zucchini, salt, sweet basil and soy sauce.
  5. Cover and simmer about 5 minutes.
  6. Stir in corn and tomatoes and the stewed tomatoes.
  7. Cover and simmer until vegetables are crisp-tender.
  8. You may serve this dish as a soup or serve over cooked rice or noodles.
