Dry-Roasted Baby Back Ribs

  1. Position the oven racks so that they are evenly spaced.
  2. Preheat the oven to convection roast at 400F.
  3. Pat the ribs dry.
  4. Combine the olive oil, garlic, lemon pepper, paprika, and black pepper and rub the mixture over the ribs on all sides.
  5. Place the ribs, bone side up, on the roasting rack placed over the roasting pan that comes with your oven.
  6. For easiest cleanup, the rack should be coated with nonstick spray.
  7. Rub the ribs with 4 minced garlic cloves; 2 tablespoons olive oil; 2 tablespoons crushed, dried rosemary; and 2 teaspoons kosher salt.
  8. Roast as directed above.
