Dry-Roasted Baby Back Ribs
- 4 pounds baby back ribs, cut into 6 equal pieces
- 3 tablespoons olive oil
- 3 garlic cloves, minced
- 2 tablespoons lemon pepper seasoning, or 1 tablespoon freshly grated lemon zest and 1 tablespoon coarsely ground black pepper
- 1 tablespoon paprika
- 1 teaspoon coarsely ground black pepper
- Position the oven racks so that they are evenly spaced.
- Preheat the oven to convection roast at 400F.
- Pat the ribs dry.
- Combine the olive oil, garlic, lemon pepper, paprika, and black pepper and rub the mixture over the ribs on all sides.
- Place the ribs, bone side up, on the roasting rack placed over the roasting pan that comes with your oven.
- For easiest cleanup, the rack should be coated with nonstick spray.
- Rub the ribs with 4 minced garlic cloves; 2 tablespoons olive oil; 2 tablespoons crushed, dried rosemary; and 2 teaspoons kosher salt.
- Roast as directed above.
