Black Pudding And Lancashire Cheese Hash Browns Recipe

  1. Leave the potaotes in their skins and cook in boiling water till just soft.
  2. Drain and peel.
  3. Grate the potato into a bowl and mix with the herbs.
  4. Add in a healthy pinch of salt to the egg white, beat with a whisk and mix with the grated potato.
  5. Season with salt and pepper.
  6. Pat out a quarter of the fold in a circle larger than the black pudding.
  7. Place pudding and 30g (1oz) of cheese in the middle, fold over the potatoes and pat into a circle.
  8. Deep fry at 160 C/310 till golden.
  9. Serve with poached egg and hollandaise sauce.
