AMIES SQUASH with SPINACH
- 3 tbsp extra virgin olive oil
- 2 clove garlic
- 1 medium onion
- 1/4 kg pork meat, in slices
- 1/2 kg kalabasa (squash), sliced in cubes
- 1/2 kg fresh spinach
- 2 glasses of coconut milk (you can use just a glass of water)
- 1 salt or fish sauce and pepper to taste
- Saute the garlic in hot oil until golden brown.
- Add onion and cook until soft.
- Drop the pork and cook for 5 minutes.
- Add the squash and cover.
- Cook until half done.
- Uncover pan, season with salt or fish sauce, and pepper.
- Pour water or coconut milk.
- Let it boil for a few minutes.
- More salt may be added if needed.
- Add spinach.
- Cover and continue cooking until done.
- Serve, share and enjoy.
- Perfect for hot steamed white rice.
- note: dont overcook squash!
