Peachy Pork Stir Fry Recipe

  1. Trim fat from pork.
  2. Partially freeze pork; slice diagonally across grain into thin strips.
  3. Sprinkle with pepper and salt; set aside.
  4. Combine apricot spread, peach nectar and cornstarch in a small bowl; stir well and set mix aside.
  5. Coat a large non stick skillet or possibly wok with cooking spray; place over medium high heat till warm.
  6. Add in ginger; stir fry 30 seconds.
  7. Add in sliced pork; stir fry 3 min.
  8. Add in reserved apricot mix; cook 1 minute or possibly till mix is thickened.
  9. Add in peaches and snow peas; toss gently.
  10. Cover and cook 1 minute or possibly till thoroughly heated.
  11. Yield: 6 servings, about 204 calories per 1 c. serving.
