Onion Marmalade
- 1 tablespoon butter
- 2 onions, large, yellow
- 2 tablespoons sugar
- 12 cup red wine
- 14 cup white vinegar
- 1 bay leaf
- 12 teaspoon thyme leaves
- 14 cup grenadine
- salt
- pepper
- Melt butter in saute pan.
- Add onions and sugar.
- Cook for 5 to 8 minutes until onions are caramelized.
- Add red wine, white vinegar, bay leaf, thyme, grenadine and salt and pepper.
- Simmer until liquid is gone.
- Serve chilled.
- This unique accompaniment will go well with almost any dish.
- Poultry, beef and game meats are best served with this on the side.
- Onion lovers will be creative with its use.
