Hawaiian Pie
- 4 tablespoons flour
- 1 cup sugar
- 14 ounces crushed pineapple, with juice
- 2 large bananas, sliced
- 1 cup coconut, flaked
- 12 cup nuts, finely chopped (I use pecans, but try Macadamias)
- 1 -9 inch pie shell, baked
- In a saucepan, mix together the flour and sugar.
- Add the crushed pineapple with juice.
- Cook over medium heat until thick, stirring constantly.
- Pour half of the mixture into the pie shell; cool.
- When filling is cooled, add a layer of bananas, a layer of coconut and finally the chopped nuts.
- Top with the rest of the pineapple mixture.
- Chill.
- (I like to chill this for at least 4 hours)
- Before serving spread with whipped cream or Cool Whip.
