Veal Scallopini Piccata Recipe
- 2 lbs. veal fillet
- 1/4 c. all-purpose flour
- Juice of 1 1/2 fresh lemon
- 1/2 teaspoon salt
- 6 tbsp. butter
- 1/4 teaspoon black pepper
- 1/4 c. parsley, freshly minced
- Cut veal into 1/2 inch slices and lb.
- very thin.
- Dip the slices into flour.
- Place butter in large skillet and heat.
- Add in veal and brown on both sides over high heat.
- Add in salt and pepper and cook for 5 min.
- Add in lemon juice and parsley and cook for 1 minute.
- Stir well.
- Arrange on warm plate and spoon sauce over veal.
- Serve with a green vegetable.
- Serves 4.
