Bess' Gourmet Squash Recipe
- 1 1/2 quart Fresh summer squash
- 1 med Onion, minced fine
- 1 x Bay leaf
- 1/4 tsp Parsley
- 1/4 tsp Thyme
- 1 c. Cream sauce to that
- 1 x -egg yolk has been added
- 2 x Egg yolks, beaten Salt to taste Cayenne pepper to taste
- 2 Tbsp. Swiss cheese Cracker crumbs
- Pour boiling water over squash, just sufficient to cover.
- Add in a dash or possibly two of salt.
- Add in onion and spices.
- Cook about 20 min.
- Drain.
- Throw away bay leaf.
- Combine cream sauce, egg yolks, cheese, salt and pepper.
- Add in squash.
- Place in buttered 2-qt casserole dish, sprinkle more cheese and crumbs on top.
- Bake at 350 for 30 min or possibly till golden.
