Scallops With Crisp Snow Peas and Apples
- 1 medium onion, chopped
- 1 small red bell pepper, chopped
- 3 garlic cloves, minced
- 2 tablespoons vegetable oil
- 2 small apples, cored and diced
- 1 cup snow peas, trimmed
- 16 ounces sea scallops, halved
- 14 cup apple cider or 14 cup juice
- 1 tablespoon soy sauce
- 2 teaspoons cornstarch
- salt and pepper
- Stir fry onion, bell pepper and garlic in 1 tablespoon oil, 3-4 minutes.
- Add apples and snow peas and stir fry 3-4 minutes longer.
- Move apples and vegetables to side of pan and add remaining oil and scallops.
- Stir fry until scallops are cooked and tender, about 5 minutes.
- Stir in combined apple cider, soy sauce and cornstarch; cook over medium high until thickened, 1-2 minutes.
- Season to taste with salt and pepper.
