Scallops With Crisp Snow Peas and Apples

  1. Stir fry onion, bell pepper and garlic in 1 tablespoon oil, 3-4 minutes.
  2. Add apples and snow peas and stir fry 3-4 minutes longer.
  3. Move apples and vegetables to side of pan and add remaining oil and scallops.
  4. Stir fry until scallops are cooked and tender, about 5 minutes.
  5. Stir in combined apple cider, soy sauce and cornstarch; cook over medium high until thickened, 1-2 minutes.
  6. Season to taste with salt and pepper.
