Carrot cake - sheepea's healthy baking
- 70 g grapeseed/rapeseed oil
- 40 g unrefined sugar (I use golden caster)
- 1 egg (I use organic)
- 160 g grated carrots (I use 2 large organic carrots. washed but not peeled)
- 40 g raisins/sultanas (organic) or seeds/nuts
- 70 g plain flour
- 70 g wholemeal plain flour
- 1 and 1/2 tsp Baking powder
- 2 tsp combination of cinnamon, ground ginger and nutmeg
- Pre-heat the oven to 180 degrees (fan).
- In a large bowl, mix oil and sugar using a whisk.
- Add the egg and mix until well combined - looks creamier.
- Add the carrots and raisins (or seeds/nuts, if preferred), combine well.
- Add the dry ingredients a third at a time, mixing lightly with a spatula.
- Try not to knead the mixture!
- Spoon the batter into the baking tin.
- Place in the oven to bake for 40 minutes.
- Turn the cake out onto a wire rack.
