Carrot cake - sheepea's healthy baking

  1. Pre-heat the oven to 180 degrees (fan).
  2. In a large bowl, mix oil and sugar using a whisk.
  3. Add the egg and mix until well combined - looks creamier.
  4. Add the carrots and raisins (or seeds/nuts, if preferred), combine well.
  5. Add the dry ingredients a third at a time, mixing lightly with a spatula.
  6. Try not to knead the mixture!
  7. Spoon the batter into the baking tin.
  8. Place in the oven to bake for 40 minutes.
  9. Turn the cake out onto a wire rack.
  10. Hope you enjoy!
