Uncle Luke Beans (Judias Blancas a Lo Tio Lucas)

  1. Place the beans in large pot of cold water; bring to a boil; drain; cover with 1 quart of water.
  2. Add all the remaining ingredients except salt and cook, covered, over low heat at least 45 minutes, or until beans are tender.
  3. Add salt and cook slowly another 10 minutes.
  4. Serve with sardines, if desired.
