Lonnie's Mom's Barbecue Roast Beef
- 4 lbs beef roast (eye of round is great)
- 1 medium onion, chopped
- 2 tablespoons vinegar
- 1 tablespoon yellow mustard
- 2 teaspoons sugar
- 1 teaspoon dry hot mustard
- 1 teaspoon chili powder
- 12 teaspoon salt
- 12 teaspoon sweet Hungarian paprika
- 12 teaspoon unseasoned meat tenderizer
- 1 dash hot sauce (I use Crystal)
- 34 cup ketchup
- 14 cup water
- Put everything but the beef in a saucepan simmer 5 minutes or so and let cool.
- Put cooled sauce and beef in a ZipLoc bag{she used a covered glass pan}in the fridge for 24 hours, turning occasionally.
- Pat meat dry and brown/lightly sear in a little oil{use your roaster on the stovetop, save a wash}.
- Pour sauce over, cover, and start in cold oven.
- roast{covered} at 325F for 2 1/2-3 hours.
- Serve hot or cold with sauce/drippings.
