Cooked Light Plum Jam - CERTO Light Crystals

  1. Chop (unpeeled) plums finely.
  2. Measure exactly 7-1/4 cups prepared plums into large saucepan.
  3. Combine 1/4 cup sugar and pectin crystals.
  4. Add to plums; mix well.
  5. Bring to full rolling boil on high heat, stirring constantly.
  6. Add remaining sugar; stir.
  7. Return to full rolling boil; cook 1 min., stirring constantly.
  8. Remove from heat.
  9. Stir and skim foam for 5 min.
  10. to prevent fruit from floating to surface.
  11. Pour immediately into warm sterilized jars, filling to within 1/4 inch of rims.
  12. Cover with lids.
  13. Let stand at room temperature 24 hours or until set.
