Cooked Light Plum Jam - CERTO Light Crystals
- 7-1/4 cups prepared plums (buy about 4 lb./1.8 kg plums)
- 5-1/4 cups sugar, divided
- 1 box Certo Light Pectin Crystals
- Chop (unpeeled) plums finely.
- Measure exactly 7-1/4 cups prepared plums into large saucepan.
- Combine 1/4 cup sugar and pectin crystals.
- Add to plums; mix well.
- Bring to full rolling boil on high heat, stirring constantly.
- Add remaining sugar; stir.
- Return to full rolling boil; cook 1 min., stirring constantly.
- Remove from heat.
- Stir and skim foam for 5 min.
- to prevent fruit from floating to surface.
- Pour immediately into warm sterilized jars, filling to within 1/4 inch of rims.
- Cover with lids.
- Let stand at room temperature 24 hours or until set.
