Skillet Taco Dinner
- 1 lb ground beef
- 1 (1 1/4 ounce) package taco seasoning (to taste)
- 2 12 cups water
- 2 12 cups cooked brown rice
- 2 cups shredded low-fat cheddar cheese
- 2 cups chopped lettuce
- 1 large tomatoes, chopped
- nonfat sour cream
- salsa (optional)
- Spray a large nonstick skillet with olive oil spray.
- Add meat and brown.
- Add seasonings and water.
- Bring to a boil then simmer for approx 20 minutes.
- Add rice and simmer until mixture thickens.
- Sprinkle with cheese.
- Cover pan until cheese melts.
- Smooth a layer of sour cream.
- Top with the tomato and lettuce.
- Serve & scoop with the taco chips.
- Enjoy!
