Chicken and Apple Breakfast Sausages
- 4 teaspoons olive oil
- 1 cup chopped apple
- 1 cup chopped green onion
- 12 cup quinoa
- 8 ounces ground chicken or 8 ounces turkey
- 1 14 cups cooked quinoa, cooled
- 2 teaspoons dried sage
- 1 12 teaspoons dried thyme
- 1 teaspoon sea salt
- 14 teaspoon freshly cracked black pepper
- 1 large egg, lightly beaten
- 1 tablespoon honey or 1 tablespoon pure maple syrup

- In large skillet, heat half the olive oil over medium heat.
- Saute apple and green onion, 4-5 minutes until onion is just softened.
- Transfer to a large bowl and wipe out skillet.
- Add quinoa flakes to skillet and cook until golden and fragrant.
- Add to apple mixture.
- Also add chicken, cooked quinoa, sage, thyme, salt, pepper, egg and honey, stirring to combine.
- Add remaining oil to skillet and heat over medium.
- Make 10 patties.
- Cook 3 minutes per side or until no longer pink inside.
