Spiced Honey Syrup
- 4 cardamom pods
- 1 large cinnamon stick
- 5 tablespoons finely chopped fresh ginger
- 1 cup clover honey
- 8 ounces water
- In a small saucepan, muddle the cardamom pods with the cinnamon stick.
- Add the ginger, clover honey and water.
- Bring just to a boil, then lower the heat and simmer for 15 minutes, stirring frequently.
- Let cool.
- Strain through cheesecloth into a jar.
- Refrigerate for up to 1 month.
