Spiced Honey Syrup

  1. In a small saucepan, muddle the cardamom pods with the cinnamon stick.
  2. Add the ginger, clover honey and water.
  3. Bring just to a boil, then lower the heat and simmer for 15 minutes, stirring frequently.
  4. Let cool.
  5. Strain through cheesecloth into a jar.
  6. Refrigerate for up to 1 month.
