Leftover Turkey, Cranberry Sauce and Brie Sandwich

  1. Lay 4 slices of bread on your work surface and top with a few slices of leftover cooked turkey.
  2. Spread cranberry sauce over the turkey slices, then cover that with 2 to 3 slices of brie, enough to cover the turkey and cranberry sauce.
  3. Top the sandwiches with remaining 4 slices of bread.
  4. Spread softened butter on outer sides of the sandwich.
  5. Heat a large cast-iron or other heavy skillet over medium-low heat.
  6. Once its hot add the sandwiches and cook 2 to 3 minutes until the bread is golden brown on one side and the cheese begins to melt.
  7. Flip and cook 2 to 3 more minutes to brown the other side of the sandwich.
  8. Brush on more butter if needed.
  9. Cut the sandwiches in half and serve hot.
  10. Makes 4 generous sandwiches.
