Macaroni Chicken Surprise
- 6 pieces chicken breast, cooked, skinned and boned
- 1 (8 oz.) pkg. elbow macaroni, cooked according to pkg.
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 c. sour cream
- 1 c. chicken broth (warm)
- 1 egg, slightly beaten
- 1 Tbsp. prepared mustard
- 1 (2 oz.) jar chopped pimento
- 2 c. shredded sharp Cheddar cheese, divided
- In large bowl, mix together, cooked and drained macaroni and chicken.
- Sprinkle with salt and pepper.
- In small bowl, stir warm chicken broth into sour cream until smooth.
- Add egg and mustard, mixing well.
- Pour over ingredients in large bowl.
- Add pimento and 1 1/4 cups of the shredded cheese.
- Mix well and pour into greased baking dish.
- Sprinkle with remaining cheese.
- Bake in 350u0b0 oven about 45 minutes.
- Makes 6 servings.
