Fragrant Comforting Chocolate Mousse

  1. Finely chop the chocolate.
  2. Dissolve the coffee in 1 tablespoon of hot water.
  3. Separate the eggs into egg yolks and whites.
  4. Put the chocolate and butter in a bowl, and melt in a double boiler at 45 ~ 50C (110 ~ 120F).
  5. Remove the mixture from the double boiler.
  6. Add coffee and stir.
  7. Add the egg yolks one by one, and mix.
  8. Pour the egg whites in a different bowl.
  9. Whip until it forms stiff peaks to make a meringue.
  10. Add 1/3 of the meringue to Step 4 and mix it 5 ~ 6 times in a circular motion.
  11. Add the remaining meringue, and fold it in with a diagonal cutting motion.
  12. Don't mix too much.
  13. Pour into molds, and chill well in the fridge.
  14. (At least for 4 hours.)
  15. Whip the heavy cream until it has thickened.
  16. Pour it on top of the chilled mousse and serve!
