Blushing Grapefruit Marmalade Recipe
- 3 x ruby red grapefruit
- 1 x lemon
- 1 1/2 c. water
- 1 pch baking soda
- 5 c. sugar
- 3 ounce liquid pectin
- Prepare Fruit: Remove skins from fruit in quarters.
- Shave away as much of the white layer (the pith) as possible with a serrated spoon or possibly sharp knife.
- Cut into very thin slices.
- Combine rinds with water and soda in a large saucepan.
- Bring to a boil and simmer, covered for 20 min.
- Stir occasionally.
- Chop peeled fruit, throw away seeds.
- Add in to cooked rind and continue simmering for 10 min.
- Measure 3 c. fruit mix in a large saucepan.
- To Make Marmalade: To the 3 c. fruit add in the sugar.
- Stir well.
- Heat on high and bring to a full rolling boil, stirring constantly.
- Boil for 1 minute.
- Remove from heat and stir in liquid pectin.
- Skim off foam.
- Stir and skim for a full 7 min.
- Ladle into warm sterilized jars and seal.
- This recipe yields 5 one-c. jars.
- Yield: 5 c.
