Layered Enchilada Casserole

  1. Microwave beef to brown.
  2. Drain fat.
  3. Stir in beans, seasoning mix and 1 cup water.
  4. Cook on HIGH 5 minutes, stirring once.
  5. Pour tomato sauce into bowl.
  6. Dip both sides of tortillas (cut up if necessary) in sauce.
  7. Layer beef mixture and tortillas in microwave safe 13 x 9" dish.
  8. (make 2-3 layers of meat/tortillas.)
  9. Sprinkle cheese over all.
  10. Cover tightly with plastic wrap.
  11. Cook on MEDIUM-HIGH 10 minutes, turning dish once.
  12. Let stand 10 minutes before serving.
  13. If desired, garnish with shredded lettuce, chopped tomato, sour cream, and sliced black olives.
