Chicken Avocado Soup
- 1 (8 ounce) box Spanish rice
- 3 avocados
- 1 white onion
- 1 (8 ounce) can diced tomatoes
- 1 bunch cilantro
- 1 pre-cooked broiled chicken
- 1 (64 ounce) can chicken broth
- Remove the skin from the chicken.
- Cut or tear the chicken into large strips.
- Cook the Spanish rice according to its instructions.
- Dice the onion and cilantro.
- Cut the avocados into medium sized cubes.
- Add the chicken strips, tomatoes, onion and cilantro into a large pot with the chicken broth.
- Bring to a boil.
- To serve, put some of the Spanish rice into a soup bowl and add some soup.
- Top off with the avocados.
