Chicken Avocado Soup

  1. Remove the skin from the chicken.
  2. Cut or tear the chicken into large strips.
  3. Cook the Spanish rice according to its instructions.
  4. Dice the onion and cilantro.
  5. Cut the avocados into medium sized cubes.
  6. Add the chicken strips, tomatoes, onion and cilantro into a large pot with the chicken broth.
  7. Bring to a boil.
  8. To serve, put some of the Spanish rice into a soup bowl and add some soup.
  9. Top off with the avocados.
